Italians do it better. Part 4.

Today is started the Stampede, or how is known here "The Greatest Outdoor Show in the World".
During the following days, I attend to that event and I'll post some photos, but now is time for another recipe.

Ingredients (for 4 persons)
  • 300g of spaghetti
  • 200g of asparagus end
  • 600g of mussels
  • 150g of champignon
  • 1 chopped garlic clove
  • 1/2 chopped onion
  • 5 spoons of olive oil
  • 1,5dl of cream
  • 3 spoons of dry Marsala
  • 1 spoon of chopped parsley
  • salt and pepper
Boil the asparagus. Clean, scrape and wash the mussels, put them in a pan with a spoon of olive oil and let them open. Then remove the mussels from the shells, eliminating those that remained closed and keep them aside. Peel and slice the mushrooms.
In a saucepan soften the chopped onion and garlic with fourspoons of olive oil, then add the mushrooms and asparagus. After a while add the mussels, and pour in the Marsala and simmer to reduce the sauce for a few minutes. Add the cream and season with salt and pepper.
In the meantime, boil the pasta in abundant salted water, drain it, pour it into the pan, stir it to absorb the sauce, cover with parsley and serve.

Oggi è cominciata la Stampede, o come è conosciuta qui "Il più grande spettacolo all'aperto del mondo".
Durante i prossimi giorni, parteciperò all'evento e pubblicherò qualche foto, ma ora è tempo di una nuova ricetta.


Ingredienti (for 4 persone)
  • 300g di spaghetti
  • 200g di punte di asparagi
  • 600g di cozze
  • 150g di champignon
  • 1 spicchio d'aglio tritato
  • 1/2 cipolla tritata
  • 5 cucchiai d'olio
  • 1,5dl di panna
  • 3 cucchiai di Marsala secco
  • 1 cucchiaio di prezzemolo tritato
  • sale e pepe
Lessate gli asparagi. Pulite, raschiate e lavate le cozze, mettele in una padella con 1 cucchiaio d'olio e fatele aprire. Quindi levate i molluschi dai gusci, eliminando quelli rimasti chiusi e teneteli da parte. Mondate e affettate i funghi.
In un tegame fate appassire il trito di cipolla e aglio con 4 cucchiai d'olio, poi unitevi i funghi e gli asparagi. Dopo un poco unite le cozze, versate il Marsala e fate restringere il sugo per alcuni minuti. Aggiungete la panna e regolate di sale e pepe.
Nel frattempo lessate la pasta al dente in acqua bollente salata, scolatela, versatela nel tegame, mescolate affinché assorba il condimento, coprite col prezzemolo e servite.
